Yeast represents sin. Unleavened bread to be eaten at passover points to Christ who is the bread of life who is sinless.

Moses had not circumcised his sons, perhaps he had allowed Zipporah to persuade him against doing it, but as an Isrealite he should have done it and perhaps God was protecting his sons by insisting it was done.

Since Moses obviously thought this was a venemous snake it took a lot of faith and obedience to pick it up by the tail.
